Teriyaki Chicken



Slow and easy.

My two favorite words.

Next to chocolate and free.

This is neither chocolate, nor free, but it is slow and easy.

And did I mention, delicious?

Teriyaki Chicken

1/2 cup unrefined sugar
1/2 cup tamari sauce (or soy sauce)
1/4 cup apple cider vinegar
2 cloves garlic, minced
1-2 t. fresh ginger, minced or grated
1 T. cornstarch (or arrowroot powder)
1 T. cold water
1/4 t. black pepper
12 boneless, skinless chicken thighs
1 sweet onion, cut into chunks

In a small saucepan, mix all ingredients except the chicken and onions. Bring to boil, stir and remove from heat. In a crockpot, place onions then chicken thighs on top. Pour sauce over chicken. Cook on high for 4-6 hours. Serve with brown rice and steamed veggies. If you want extra sauce for the rice, just double sauce ingredients!
