Meal Plan for 2/15-2/21/2010



Back to reality. We spent 2 days on the Long Beach peninsula, without children, braving the rain, crowds of people and spending quality time alone.


We were bored most of the time.


Not with each other, but with the peace and quiet that every parent thinks that they need. I guess we do, but my definition of "quiet" might be different from others. Quiet for me means that the kids aren't fighting with each other, or wrestling with the dogs, the phone isn't ringing and the background noise of the television isn't interrupting any serious thought that I may be trying to process.


No sound at all is just, well, eerie.


Coupled with the fact that there was an attempted "cop killer" on the loose, and it was windy and raining...yep, just creepy.


We really did enjoy our time alone together.


But really, there's no place like home.


My Mister and I ate at a wonderful Thai restaurant on Saturday. We had Peanut Curry with Asparagus and Lemongrass. I can't find a recipe for this anywhere, but I'm going to try to duplicate it this week using several different recipes that I found. I'll share it if it turns out.


If it doesn't, I'll be heading back to the beach this week!

Monday
~cold cereal (Hey, I've been gone!)
~Pb&J sandwiches, chips, apples
~Lentil burritos, salad with homemade ranch


Tuesday
~Simple soaked pancakes
~Simple nachos, fruit
~Thai Peanut Curry with asparagus and lemongrass, brown rice


Wednesday
~Oatmeal
~Egg salad sandwiches, carrot sticks
~El Rancho Skillet Pasta, green beans (I'll share the recipe this week.)


Thursday
~Cranberry muffins, fruit smoothies
~Quesadillas, black bean dip, tortilla chips (black beans, salsa, sour cream)
~Beef stew, buttermilk biscuits


Friday
~Oatmeal
~Homemade tomato soup, Cheesy crackers
~Barbecue meatballs, Yummy Yammy fries, fruit salad


Saturday
~Blueberry coffeecake, hot chocolate
~leftovers
~Baked Chicken Teriyaki, quinoa, baby peas


Sunday
~granola
~Chili, cornbread
